Is a patch cable also referred to as a crossover cable?

BEST ANSWER: No. Patch cable is just a traditional ethernet cable. Crossover cable specifically alters the wiring to "cross over" the signal carried from certain pins on one connector, to the other connector. I'm over-simplifying, but if you need a cross over cable, you'll want to look for something that specifies that functionality.
Note that newer network adapters typically no longer ever require crossover cables. If the ethernet port supports a feature called "auto mdix", it can basically detect the signalling on the pins and adjust accordingly, allowing you to use either a traditional standard ethernet cable or a crossover cable. Any computer sold in the last 6-7 years almost certainly supports this. As for networking equipment, that should also be the case, unless it's some really low budget device.
Note that newer network adapters typically no longer ever require crossover cables. A crossover cable is a particular type of patch cable. A patch cable is used for connecting two devices together, a crossover cable has the data signal lines "crossed over" so you can connect 2 endpoint devices together without an intermediate switch. You don't need a crossover cable if both devices support 1G ethernet, the protocol is smart enough to do that for you automatically.

No, a crossover cable specifically has a pair (depending on 568A or 568B) that is swapped. The crossover cables allows you to connect to "like" devices such as computer-to-computer, switch-to-switch, etc. A patch cable is also known as a straight-through cable as is used to connect computer-to-switch, switch-to-router, etc. I hope this answers your question.

No. While they look similar, a crossover cable will have reversal in its pairs (transmit and receive). Crossovers are typically used to connect two devices directly, like computer to computer, instead of through another device like a switch, where you'd use a patch/straight-through cable.

Are these cables in T568B?

BEST ANSWER: the ONLY difference between 568A and 568B is the color of the individual conductors not the position on the plug or jack. Since there is no need to re-terminate the ends of patch cables it makes no difference if they are A or B. As long as you terminate both ends the same A or B are electrically the same.

The green and green/white are swapped with the orange and orange/white when you switch between the two standards. 568B is pretty much all you see nowadays. However, for the absolute best performance, you should try and use the same standard all the way through the cables. This means the patch cord on both ends and the installed data drop all should be the same standard (568A or 568B). Each color pair is twisted at a different rate. If you switch between standards, then the twist rate is changed which can affect the performance of the cable.
Regardless, either standard works fine. If you are using a single cable between devices, then you are good to go.

Can I run this cable through the attic to connect security cameras?

BEST ANSWER: I have two answers for you. Yes it will work and I have seen it done. The real answer is that it is not listed for use in in walls, attics or crawlspaces so it would violate the Electrical Code. the rating you need is CL-2 or better. Riser listed cable is the most commonly used and is available from Monoprice as bulk cable. I use the proper cable and then install jacks as I have better reliability installing jacks then I do plugs. Then I use short cables like the ones here at each end. I have installed over a hundred IP cameras this way with good success. I like cat6 wire that is 23 gauge solid copper to reduce voltage drop from the cable. Avoid cable that says CCA. that is copper clad aluminum and can cause many problems. Good luck with your project.

I want to run this cable from a point inside my home, then a good 75-80 feet outside along a wall, then back inside to another point inside my home. Is this cable made to withstand weather and other exterior issues?

BEST ANSWER: I would not consider this an outdoor cable. I would look into something else that is considered outdoor rated. In my opinion, either way, I think if you are going to run it outside, you should put it inside of conduit to protect it from the environment so you don't kick yourself because it got ripped in half from something. I believe shielded twisted pair is what they use for outdoor cable but I am not positive. The conduit would protect this cable, but I don't know that this cable is meant to withstand severe temperatures. Hope that helps.
